

Geese are freshwater birds that belong to the same family Anatidae as the duck and turkey. A goose looks like a duck but it’s bigger. Goose meat is dark and rich. In taste and texture, it holds certain similarities to one of a duck, but with a slightly less cloying flavour.
The flesh is densely-textured meat and juicy. Geese are mainly available in the Winter season. Poultry from Bresse is certified by the D.O.P. (Protected Designation of Origin), they are bred in the region of Bresse in Eastern France.
