Au Chapon is one of the largest producers of AOC Bresse poultry (chickens, turkeys, and pollards). The company was founded by Andrea Bosoni in 1906, when it was called the Bosoni company. There is a slaughterhouse in the same city that processes mainly squabs. Jacqueline Bosoni and her husband Jean bought the company in 1978 and rebranded it as Au Chapon Bressan. Bresse poultry has. since then, possessed the organoleptic characteristics of Bresse poultry, such as being succulent, tender, and marbling.
