The farmed Salmo saiar (cultured from embryos) have been fed exclusively on dry feed pellets that cannot contain viable parasites that present a health hazard.
The farmed Salmo salar for consumption have been subjected to monitoring of parasites, which confirms that the fishery products do not represent a health hazard with regard to the presence of viable parasites.
A report from EFSA from 20l0 concludes that farmed Atlantic salmon fed on dry feed is unlikely to contain live parasites, and the risk of anisakiasis after consumption of raw, unfrozen farmed salmon is therefore negligible.
Based on this information, the Faroese Food and Veterinary Authority, therefore, consider it safe to eat raw farmed salmon, like sushi, without prior freezing.
