
All short ribs are from a rib section that contains three to four ribs of the beef. The flanken bone is a thin cut of the short ribs, which goes across the bones and contains a few pieces of bone.
Short ribs meat contains a lot of muscle, fat, and tendon, which gives it a strong beefy flavour. When cooked it becomes very tender and juicy.
