Cèpe or cep mushroom has numerous names like penny bun, king bolete or even porcini. When called "bouchon", this means they are smaller than regular ceps, with a stronger mushroom taste profile.

Cep mushrooms are a most sought-after edible bolete, they have a very chunky shape because of their white thick stem and brown rounded cap. Their flesh is firm, they taste very mushroomy, appreciated for their nutty flavor.

They can be used raw or cooked, fresh or dried, it is a very simple ingredient to add to any meal. Cep mushrooms are available from summer to fall.
