Durum wheat pasta that has an elongated, hollow shape and a smooth surface. Initially called the maccaroni 'ra zita, Ziti were the primary pasta format in Neapolitan cuisine. Usually made from durum wheat, these pastas have a long, cylindrical, hollow shape, smooth surface, and a larger diameter than bucatini, but closer to the candles than the mezzani, and a little narrower than the candles.
Specifically, zito is the southern form of citto, which once meant "child", "unmarried woman," and then "boyfriend" in Tuscan. Zite traditionally prepare a dish called Maccheroni della Zita for the festive lunch.
