Ricotta di Vacca Affumicata is a handmade cheese with an irregular shape. It has a very thin rind and brown in colour, while the paste is white, the texture is velvety and silky. This delicious fresh ricotta cheese is smoked in a wood-fired oven.  

Ricotta di Vacca Affumicata is sweet in taste, round, full in the mouth with long smoky notes. Also, it has an intense flavour of wood & smoke Intense with a pleasant aroma and fragrance. It is ideal for the first courses. Ricotta cheese can also be grated on "gnocchi", soup, pasta, and "risotto".
