Pecorino Di Pienza Red from Tuscany

Pecorino Di Pienza has a thin rind with a wonderful red color due to the treatment with tomato sauce which is aged for 40 days.

The flavor is in the mouth for long and deliciously buttery in taste. There is a round slightly acidic but sweet aftertaste due to the butter from the milk. The paste is soft to semi-hard and its color varies from white to ivory.

Pecorino Di Pienza is a dairy product made from pasteurized sheep's milk and each stage of preparation is done with great passion and precision. There are no fertilizers used in the pastures used by Valsana and special attention is given to the feeding of the sheep.

The treatment with tomato sauce is a traditional Tuscan technique to transfer some acidic flavor to the pecorino. They are perfect on their own with a slice of Tuscan bread (bread without salt). It is recommended to serve them at room temperature.
