Smoked Burrata

Caseificio's smoked burrata is made entirely by hand. It is a fresh cheese obtained from cow's milk, with an external layer of spun curd containing, inside, pieces of stretched curd and cream.

With the spun curd normally used for cow's milk mozzarella, small bags are formed containing pieces of the same paste as the casing and cream.

The beautiful amber color is obtained by smoking burrata with the fumes of beech wood.
