
Roquefort is an appetizing cheese with a creamy texture and blue and green veins, made from raw sheep's milk that has been aged for 60 days. It has a fine taste and a distinct flavor, which becomes spicy when the maturing process is advanced.
It is said that a shepherd once left his bread next to a piece of cheese in a sheepfold to chase a young woman. On returning after several days, he found his bread moldy again, but also the cheese covered with a blue layer of fuzz. The man tasted the cheese and liked it; that's how Roquefort was born.
