
Aisy Cendre is a delightful cheese made from pasteurized cow's milk, carefully aged in a mold for nearly two days. This cheese is then washed by hand with Burgundy marc water and rolled in vine ash. Thus, its appearance is cylindrical, offers a uniformly smooth texture, and is also creamy with a well-balanced flavor enhanced by woody notes.
As an aperitif, it is excellent spread on a slice of rye bread. The crust of the cheese is scraped off before tasting to reduce excess ash. Its flavour also adds a nice touch to meat dishes, such as a steak cooked over a wood fire.
