Pecorino is a sheep's milk cheese curdled with lamb rennet. It is offered in its young form with a compact white paste and a soft consistency with a slightly spicy flavor. Semi-matured at 3 months, it is perfect after three months of maturing as a table cheese.

The qualitative excellence of Bithi di Barbagia's products is due to the quality of the sheep's milk, produced in the mountains, from free-range farms where the pristine nature, rich in flower-filled pastures.
