
Pinna Sapere Sardo
The two brothers came together in the 1950s to create a new, modern dairy. Milk was obtained from flocks all over Sardinia and processed in Thiesi. Thus, it became possible to maintain new levels of hygiene and safety throughout the entire process.
After a few years, the grandchildren of Giommaria and Francesco joined the company. Fresh and delicate cheeses made from Sardinian milk could be made and matured with new systems step by step. Those that previously could only be tasted a few kilometers from the folds could now be found all over Italy and the world.
This company was among the first in Sardinia to use pasteurization and steam-heated stainless steel containers to ensure absolute hygiene and very high and consistent quality.
